I've run my restaurant for five years. One customer of mine booked a private dining room with me every holiday. She was doing someone a favor, so she reserved a full seafood banquet ahead of time, and I charged her only my rock-bottom price of $999. She looked at the bill, then turned right around and went to another place, and started making snide little comments in the group chat. "Some restaurants, huh. Once business gets big, they start gouging the loyal customers." "Same exact dishes, and another place quotes you half the price. Now that's a restaurant that knows how to do business and actually has a conscience." I stared at that other owner's name for a few seconds. A five-hundred-dollar seafood spread, out of season? Right. If she can stomach it, fine by me! 1. I'd barely finished the quote when my head chef couldn't help speaking up. "Boss, seafood's priced by season. What you're charging is straight cost. There's no profit in this at all!" I just smiled. Lucretia Lambert was one of our regulars. She came in every holiday to give us business. The dishes she ordered were almost all seafood, and once you counted labor, water, and power, this table barely earned a thing. I chalked it up to giving something back to a loyal customer. Not long after I sent the quote over, Lucretia's message came in. "Boss James, is this discounted or not? lol" That threw me for a second. Did she think I'd shortchanged myself somehow? "Lucretia, you're one of our regulars. This is the lowest price I can give." She didn't reply for a while. It was the dinner rush on my end, and I had my hands full anyway. When I saw her message a bit later, I paused. "Lowest price? Boss James, you're gouging me, aren't you? I only booked with you because I trusted you." Those words didn't sit well with me. Still, she'd been a customer for years, so I kept my wording gentle. "Lucretia, there's no way we'd ever gouge a regular. Seafood really is seasonal, and the way you want some of it prepared is pretty involved." She had the typing dots going for several minutes, and finally a message came through. "Fine, I believe you. Here's the deal, on top of this you throw in two extra dishes for me. I'm hosting an important friend that day. It's settled." Before I could get a word in, she transferred the deposit and made the call for me. Fine. I run an open business. No point in offending a regular. I agreed. The day she was hosting her friend happened to fall on a holiday, and she'd booked it nearly half a month in advance. One way or another, she'd saved herself a good chunk of money. Someone in the kitchen couldn't help grumbling. "This customer really knows how to milk a deal. Same thing every time, always squeezing free dishes out of us whenever she comes in." I'd always known Lucretia had her little habits. But since she'd been coming in to support us ever since I first opened, I never felt right saying anything. Before I knew it, purchasing day was almost here. Then Lucretia messaged again out of nowhere. My right eyelid twitched hard. "Boss James, I just want to check, that bill is the final version, right?" I replied yes, uneasy. "You can't knock a little more off?" I pressed my lips together. The waters had been rough lately, and seafood prices were sky-high. Buying everything for her table, there was no profit in it at all. I laid it out for her plainly. The next second, she snidely tossed me another restaurant's quote. Exact same dishes, half the price of mine. I asked her what she meant by it. "And you call this not gouging? Same stuff, but yours is somehow so precious! Boss James, and to think I trusted you this much. So this is how you've been fleecing me the whole time!" With a blame this big dumped on me, I laughed out of pure anger, and half my heart went cold. All these years she'd given me plenty of business, and I'd turned a blind eye to the way she milked me. Now I couldn't bring myself to care about any of that. "If that's what you think, then you can find someone else for this order!" I didn't defend myself, and I couldn't be bothered to go back and forth with her anymore. I just refunded the deposit. I wasn't taking this order!

The message went through, the deposit was refunded, and there was nothing back from her at all. I steadied myself and talked myself out of stewing over something this petty. I was just about to put my phone down and get on with other things when it started buzzing like mad. Frowning, I saw that Lucretia was running her mouth in the customer group chat. Something jolted through me, and I tapped straight in. "Steer clear of this place! She gouges her regulars. Same dishes, double the price!" "I've eaten there for five years, and she's been ripping me off for five years! Wise up, everyone!" My vision went black and my heart slammed against my ribs. She'd stitched my quote together with the one from that new place she'd found. Set side by side, the price gap looked damning. I'd figured we were all adults. If a deal fell through, we could part on decent terms. But she'd actually smeared me in a group of five hundred people, and I'd had enough. "Lucretia, that's not how it works. With seafood you get what you pay for, and everyone can see the quality at my place." She fired back at once. "Ha, so you're saying the other place has bad quality? Just answer the question, did you gouge your regulars or not?" I was shaking with anger. In this line of work, you get customers who know their stuff, and you get ones like her who only half understand. The second she said it, people started chiming in. "Yeah, prices go up every holiday. Boss, gouging your loyal customers like this really isn't right." Lucretia jumped right back in: "Crooked business! Hope you go under soon!" Plenty of people started to doubt me, saying all sorts of things. Something inside me went cold. I couldn't take it anymore and called Lucretia to demand what she was actually after. She let out a snort. "You ripped me off for so much money. Here's the deal. Refund all the money you gouged out of me over the years, and I'll leave you alone." "If you won't, I'll make sure even more people know your place is a scam." I gripped the phone. There was no point saying more to someone like her. Stand straight and you don't fear a crooked shadow. "Do whatever you want." And I hung up. My heart was pounding hard, and thinking about all the customers who'd just piled on with her in that group, I'd be lying if I said it didn't hurt. Right then, my phone buzzed. It was another regular, Bill Donaldson. I drew a breath and picked up. Bill's cheerful voice came through right away. "Boss James, that woman in the group canceled her private room. Is it still open?" I paused. Most of my private rooms are booked ahead. Since I'd refunded her deposit, it had naturally opened back up. I told him so. Bill didn't hesitate: "I'll take it! I've been going out of my mind trying to find a good place to host a dinner!" My throat went a little tight. "Bill, didn't you see what people were saying in the group?" To my surprise, he just snorted and laughed. "The ones piling on don't know good food from bad. I've eaten at your place for years, you think I don't know your quality? She got a bargain out of that quote of yours. Charge me whatever's fair!" When I hung up, warmth spread through my chest. When you run a business open to the public, finding a customer who truly gets you is rare. I gave Bill the same price I'd given Lucretia. Without a word, Bill sent me an extra five hundred. I tipped my head back, wiped away my tears, and swore I'd make that table of food perfect for him.

On the holiday itself, Lucretia was up early posting photos of the other restaurant to the group. I gave them a glance. The place did look nice. Clearly a lot of thought had gone into it. Then came Lucretia's usual snideness. "Eating somewhere like this really does lift the mood. Not like certain places, old and rundown, with prices that are downright outrageous." I couldn't help smiling. The owner of that restaurant was named Bruce Dickerson. Everyone in our line of work had heard of him one way or another. He and I had once trained at the same place. Back then our teacher used to say Bruce didn't put his cleverness where it belonged. At the time I hadn't understood what that meant. Later, hearing it from others in the trade, I learned he always liked to work the surface, deliberately undercutting prices to steal business. But he sourced his stock carelessly. Only the prices looked good. What you actually got to eat was pure luck. And customers had no way to take it up with him. She kept needling me in the group. "What's this? Some people don't dare speak up now? Businesses that gouge their regulars should just go under fast!" "Once the food's out, I'll show all of you what an honest business really looks like!" Bill was furious on my behalf and asked why I didn't just kick her out. I sighed and typed back. "If you stand straight, you don't fear a crooked shadow. If I kicked her out, she'd just go somewhere else to badmouth me." That would only make things harder to control. Because of her ranting in the group, our foot traffic dropped by a third. Not only that, some customers who'd booked private rooms in advance got poached off to that restaurant she was recommending. The staff were starting to get anxious. I did my best to reassure them. Who was right and who was wrong, the people who knew the business would judge for themselves. Besides, I didn't have that much time to spare on an idler like her. I turned off the screen and got back to work, and around the right time, Bill showed up. I led Bill into the private room. When the food came out, his face lit up and he said with real feeling, "Boss James, this is genuinely such good value!" I smiled. People are good to me, I'm good to them. He couldn't resist urging me again. "There are so many customers watching that group of yours. You really won't come out and say a few words? You're just going to let her run her mouth in there?" Seeing Bill so genuinely angry for my sake left me feeling warm inside. "Bill, the mouth belongs to her. She can say whatever she wants." I smiled. Besides, I wasn't holding back. I was waiting to watch her make a fool of herself. Lucretia had said it herself at the time, that the person she was treating to this dinner mattered a great deal to her. Someone she'd rack her brain to impress, could that be an ordinary person? So whether the food was any good, one bite would tell. I curved my lips. "Bill, don't you worry. I know exactly what I'm doing." Bill sighed, unable to hide how much he cared. Coming out of the private room, I had two more small dishes sent in. Once that rush was over, I could finally relax and take a sip of water. Who would have thought, the group had blown up.

I paused, then tapped in to look. It turned out Bill had just posted a few photos of his dishes. Ordinarily that wouldn't have mattered, but next to what Lucretia had posted, the contrast was brutal. I scrolled back up to Lucretia's message. She was showing off her big spread of seafood, positively glowing. "Looks good, doesn't it? Nice place, too." I glanced at it and couldn't help laughing. The mantis shrimp was obviously frozen stock, and the red grouper was low grade too. A table like that still left room for profit. The thing about Bruce Dickerson was that he could dress up mediocre ingredients and make them look like something. At first glance, everyone in the group was impressed. "This whole table of seafood was really only five hundred and change? No way. Seafood is so expensive these days!" "Right? Aside from the portions looking a little small, everything else seems pretty good." More and more people piled on with praise. She went ahead and dropped Bruce Dickerson's business card right there in the group. "Mention my name and you can even get a discount " That blatant little ad was meant to rub it in. Everyone kept asking how it tasted, tagging her in the group, and she went quiet. It wasn't like I'd never tried Bruce Dickerson's cooking. All I could say was, it was okay. Passable. But if the guest being treated had a picky palate, it wouldn't fly. Soon enough, her moment in the spotlight got stolen by the few photos Bill had posted. The group blew up all over again. Nothing hurts like a side-by-side. Straight-from-the-camera shots of the dishes, quality plain to see. People held those few photos up against the ones Lucretia had posted. The exact same dishes, and the difference in quality was obvious at a glance. All the praise for Lucretia turned to pity in an instant. "Oh my god, don't be a cheapskate. You get what you pay for!" "Right? Looking at those photos up top now, that food couldn't look less fresh, and the portions are small too. I'd rather pay more." I found it funny. No amount of talk beats letting the results speak. Thanks to Bill's backing, several more customers came to me and placed reservations. Just then, my phone started buzzing. I glanced at who was calling, ignored it, and let her ring until it cut off on its own. But wouldn't you know it, the phone rang again. I stepped out into the hallway and picked up. On the other end, Lucretia's voice was awkward and a little guilty. "Boss James, are you still busy?" I gave nothing away. "What can I do for you?" Her voice came through, on the verge of tears. "The food at this place is no good!" "I invited someone to dinner, and he took one look, ate in a rush, and left. Nothing got settled! He's really picky. Could you maybe free up a private room for me and bail me out here…"
